Perhaps it’s the fresh air or the flickering flames, but we think all food tastes better when cooked on one of our firepits… So as much as we love toasted marshmallows, burgers and s’mores, perhaps it’s time to think outside the box. These five delicious recipes all incorporate fresh fruit and veg, protein and carbs to create a healthy, balanced meal – the perfect fuel for hours spent running and exploring in the great outdoors!

So when you’re packing the car for your next trip to Lantern & Larks, make sure to include your skillet, foil and skewers… it’s time to try something different!

Pan-Roasted Campfire Veggies

If you’re looking for ways to get some colour into your glamping menu, these roasted vegetables will add an entire rainbow! One suggested version uses button mushrooms, peppers and tomatoes, but you can substitute with your own favourites – they’re all set off with a delicious sauce that is sure to have you coming back for seconds.

Simply whip up the smoky sauce using water, soy sauce, vinegar, and sriracha, before popping your chopped vegetables in a skillet over the hot coals. When the veg has been sizzling for a while, add the sauce and let everything cook down. Serve immediately as a healthy, flavoursome side-dish… the perfect accompaniment for your alfresco meal!

Caprese Chicken Foil Packets

This recipe requires a little bit of preparation before you leave home, but it will be completely worth it when dinner time comes around! Not to mention, you’re sure to stun your fellow guests with your incredible campfire cooking skills.

This recipe only needs a few fresh ingredients, including chicken breast, tomatoes and mozzarella, and a few cupboard staples. Cover the chicken with balsamic vinegar, olive oil, garlic, and oregano. Top with basil and tomato and wrap in foil to create a little parcel. These can be kept in your tent’s cool box for up to a day, so they’re a great choice as a tasty welcoming meal on your first night.

When your campfire is ready, heat the parcels above the coals until the chicken is just cooked through, turning halfway through. Open the parcels (carefully!) and add the mozzarella. Rewrap and pop back in the heat until the cheese has melted, before serving to your very impressed campmates!

Sausage, Pepper & Potato Packets

Another meal to prep ahead of your holiday, these foil parcels are ideal for saving time when you’re at our sites. After all, the last thing you want to be doing is chopping and slicing in the tent while everyone else is out having fun! With its rich flavours and textures, this version is particularly great for cosy, autumn nights around the fire.

Simply chop up potatoes, peppers, chicken sausages and onions, then combine in a bowl with olive oil, paprika, thyme, salt and pepper. Wrap each portion in foil to create a nice parcel. These can then be stored in your cool box for up to a day. When you’re ready to eat, cook them above the coals of your campfire for about 25 minutes, or until everything is cooked.

Garlic Butter Corn

We don’t know about you, but corn is perhaps one of our favourite things to cook over the campfire – not to mention, there’s no washing up! Add an extra dimension to this delicious staple with a garlic and chive butter. Simply combine butter, garlic, chives, salt and pepper in a bowl, then rub over each piece of corn. Wrap each one in foil, and cook above the campfire coals for about 15 minutes.

Grilled Fruit Kebabs

Grilling is often something we associate with meat-based meals, so why not try something different by adding some fruit into the mix? These fruit kebabs are a fantastic way to finish off a meal – not only are they a healthy alternative, but they’re completely delicious and look beautiful!

It couldn’t be easier to make these charming snacks. Simply chop up your favourite fruit and add to skewers, then cook over the fire! If you fancy adding a little more depth to the flavours, why not sprinkle each skewer with cinnamon and brush with honey and lime? However you decide to make them your own, they’re sure to add a refreshing splash of colour to your meal.
